Nothing like a great-tasting home-cooked meal!


My three favorite cooking ingredients are garlic, onions, and cilantro (for some things). Freshly picked and finely chopped and sautéed in olive oil they are a great combination for great tasting rice. I prefer brown rice but white rice is yummy also. Stir 1-2 cups of rice with the already sautéed vegetables until the rice is sufficiently brown. Add water just to cover the surface of the rice, but for brown rice use an extra half-cup of water. Let it come to a boil, lower the temperature, and then cover for twenty minutes without EVER opening the lid. For brown rice let it simmer for 5-7 minutes extra because brown rice has a high-fiber bran coating and needs more time and water to soften. Add salt, but not too much. I am actually not having too much salt these days, doctor's orders.

Stick some yummy marinated salmon in the oven for 20 minutes, slice some tomatoes, pour a glass of wine, and voila a simple, healthy and delicious dinner for you and your family or friends. White wine is recommended with seafood but I prefer full-bodied red wines.
